Carrot Souffle recipe

Wow your guests with this delicious and hearty carrot soufflé. Light, fluffy, and bursting with the sweet flavors of carrots, vanilla and butter, this dish makes any meal into a memorable event.

Ingredients List:

1 lb carrots, coarsely chopped
½ c. butter
1 tsp vanilla extract
3 eggs
3 Tbsp flour
1 tsp baking powder
½ tsp salt
¾ c. white sugar


1. Preheat oven to 350 degrees F. Lightly grease a 2-quart casserole dish.

2. Bring a large pot of salted water to a boil. Add carrots, and cook until tender, 15-20 minutes. Drain, and mash.

3. In large bowl combine carrots, butter, vanilla, and eggs. Mix well to combine.

4. In small bowl sift together flour, baking powder, salt and sugar; stir into carrot mixture and blend until smooth. Transfer to prepared casserole dish.

5. Bake for 45 minutes; serve hot.
